Lavish Blue tea, also known as Butterfly Pea flower tea, is a caffeine-free herbal blend made either from infusion of flower petals or whole flower of the Clitoria ternatea plant. It’s an excellent caffeine-free alternative. The color goes from blue to purple depending on the pH level, so adding something acidic like lemon juice changes its color. Making Lavish Blue tea is no less than wizardery!

steeping notes for hot tea
Boil a cup of water to approx. 97°C.
Warm up the teapot.
Put tea and hot water into the pot.
Cover and steep for 3-5 minutes.
Strain tea residues and serve.

Put tea and water in a container.
Cover and refrigerate it to cold brew for 6 hours.
Strain the residues and pour tea into a cup.
lavish blue kuih lapis
Ochre Organics’ Lavish Blue tea adds vibrant blue color and rich taste to Malay Kuih Lapis.
Prerequisites
- 750 ml water
- 180g rice flour
- 500g tapioca flour
- 400g coconut sugar
- 750ml coconut milk
- 1tbsp Ochre Organics’ Lavish Blue (Dissolve1tbsp Lavish Blue in 4tbsp hot water)
Steps
- Take a large bowl, mix sugar, tapioca flour, rice flour, and coconut milk in it.
- Add 4tbps Lavish Blue to 1 liter of the prepared mixture, keep rest aside.
- Now we have blue batter and white batter.
- Slow-heat 200ml blue batter in a pan and steam for 8 minutes.
- Add 200ml white batter to add a layer on the top.
- Repeat the process to get multi-layered Kuih Lapis.
- Let it cool down before taking it out of the pan.
- Cut into uniform rectangular blocks, garnish, and serve!
